Banana, Honey & Granola Crunch Muffins


I’m pretty sure I only bake in a bid to try and bribe people into liking me. In fact, I frequently turn up to work with sweet goods to keep on my managers good side, and seeing as I haven’t been fired (yet), I’ll assume it works. Now nothing says “please don’t lock me in the stock room or force me to deal with the horrible customers that make me cry” quite like a big batch of these Banana, Honey & Granola Crunch muffins. And if I really want to get on her good side, I’ll give these to her with a cup of tea and my butter-wouldn’t-melt smile 

Ingredients

Makes 12 Muffins

2 Cups Ground Almonds
1/2 Cup Plain Gluten-Free Flour
1 1/2 Teaspoons Baking Powder
Pinch Of Sea Salt
2 Tablespoons Coconut Oil
2 Tablespoons Honey
1 Teaspoon Vanilla
3 Eggs
3 Ripe Bananas
1 Tablespoon Dairy-Free Milk
Topping: Granola And Banana Slices.

Method

Preheat your oven to 175 degrees celsius. Grease your muffin tin with coconut oil and leave to one side.

In a large bowl, combine your ground almonds, flour, baking powder and sea salt. 

In a separate bowl, cream together your coconut oil and honey with an electric whisk until pale. Add in your vanilla extract and your eggs and continue to whisk until combined.

Slowly add in your dry ingredients to your honey and coconut oil mix and stir in well.

Mash your 3 ripe bananas and fold into your wet mixture with your dairy-free milk.

Using a 1/4 cup measurement, or a large ice cream scoop, fill each well with your mixture until about 3/4 full. Top with a banana slice and a sprinkling of granola. 

Bake in your oven for about 15 - 20 minutes, or until golden brown. They should spring back when touched.

Leave to cool.


Serve with a hot cup of tea to seriously impress your manager.

Foods For Happiness

Happiness is a truly personal experience. How am I to know if the way I feel it, is the same as you? Do you feel it intensely like me, or is it just a comfortable fuzzy feeling always in the background? When I feel happy, I get a little shiver that ripples up through my spine, jerks my shoulders and goes right up and through the top of my head. I get a warm sensation that runs down from my forehead, down through my arms and right to the tips of my fingers. I smile, a lot (it’s a bit weird actually). And then for a second, I feel like I could cry, just because I’m so. bloody. happy. But however you feel your happiness, I’m sure we can all agree its one of the greatest feelings, is it not?



To me, happiness is so important. I really believe we are a reflection of the quality of our thoughts and morals, our lifestyles and how we choose to spend our time. But that is all, as I said, truly personal, and there is no right or wrong in the way we choose to live our lives. However, the quality of the food we consume can play a big part in supporting and aiding all the functions of our body to keep it running well, including our moods. Here are my top picks for foods that can help us to feel a little more happy:

Asparagus 
Asparagus contains an amino acid called tryptophan, which helps to create the feel-good brain chemical serotonin. 

Pumpkin Seeds
Like asparagus, pumpkin seeds contain that amazing amino acid tryptophan, helping us to feeling calmer. Sprinkle onto salads or onto fruit and yogurt for a serotonin hit. 

Cherry Tomatoes
Along with regular tomatoes, cherry tomatoes contain lycopene, an antioxidant which fights against depression causing inflammation. They make a great snack for when you're craving a little something sweet.

Mussels
These little shellfish’s are loaded with B12 vitamins that help produce brain chemicals that positively affect our moods and improve brain function.

Avocados
Avocados are also high in B vitamins to support the brain, and help to naturally balance out our hormones. Mash up and spread onto a slice of wholegrain toast for a snack when you need to relax.

Swiss Chard
Swiss chard is a fantastic source of magnesium, which has been associated with lower depression.

Eggs
Eggs are full of mood improving Omega-3 fatty acids. Poach and serve with steamed spinach for a punch of iron and folate.

December Favourites

“Almost everything will work again if you unplug it for a few minutes…including you” Anne Lamott.

Taking a breather, is a tool I’ve never claimed to have in my set. But in December, I learnt to just relax a little. Loosen the reigns a smidge when it came to eating well, treating myself to a couple extra mince pies I probably shouldn’t have done. Lightened up on getting to the gym for every session, skipped a couple of planned runs, and just had fun going out dining and drinking with friends. And why? Because I was told taking time out for myself was fundamental. Living your life a little bit more, is just as important as eating well and exercising, in order to become a well rounded healthy individual. 

So no, I didn’t pressure myself to do anything remotely taxing. In fact, the only stress that caused a couple sleepless nights was a certain gingerbread train awaiting being decorated downstairs. And crumbs, if baked goods are my biggest problem, I think I can cope with that. And guess what? I'm still alive. I'm still here. And I still work just fine.

Food Guide To Berlin

As with most things in life, I like to find any occasion to indulge in delicious food. Birthday? Lets eat a giant slice of chocolate cake. Failed your driving test? Ah well, lets go cry into a bowl of carbs. Your Mum’s best-friend’s uncle’s son just got married? Why didn’t you say? We should totally go for dinner an celebrate! And travel is no exception. 




I’ve recently just returned from a weekend losing myself in Berlin celebrating a close friend's 21st Birthday. Now I’d like to say I spent the whole weekend getting outrageously drunk and partying until the wee hours of the morning, but alongside the red wine and cocktails, we mainly just got euphoric from the fantastic food and ate ourselves into food comas. Berlin is such a lovely, unusual city that I’d love to return to and explore more someday. Besides, there’s only so much a girl can eat in 72 hours, right?

Here’s my top picks for food in the city,

If you’re looking to dine alongside the locals…Caligari 
Kienitzer Straße 110 12049 Berlin

Finding this little Italian gem was akin to seeing a reservoir of water when struggling through deserts. We had wandered for hours and hours and finally came across Caligari, hidden down the backstreets of a Neukolln neighbourhood. Honestly, they probably could have served us spaghetti out of a tin and we still would have been thankful. Aesthetically, the interior is incredibly minimalistic and rustic, but the food was full of flavour and authentic. Luckily the staff could speak English and helped us translate their menu that changes on a daily basis. You definitely have to be open to trying something new, as options are very limited, but if all else fails, the freshly baked bread to dip in olive oil was to die for. 




If you’re looking for a cosy spot for a coffee… Distrikt
Bergstraße 68, 10115 Berlin

Dressed with exposed walls and old leather chesterfields, it’s the perfect setting to settle back and catch up over a coffee. Bear in mind it can get very busy on a weekend morning, but if you don’t mind sharing your sofa with some locals, go in and get comfy. I recommend the Poached Eggs & Smoked Salmon served on toast, or the Buttermilk Pancakes topped with fresh fruit and granola.



If you’re looking for raw, vegan food… Daluma
Weinbergsweg 3, 10119 Berlin

A completely raw cafe located in the heart of Berlin. It has a very hipster aesthetic and seems to be frequented by health foodies and yogis. Get there early to try their Buckwheat Porridge, or detox your system with their acai Dr Feel Good smoothie if you drank a little too much the night before. The staff are friendly and speak excellent english.

If you’re looking for something a little unusual… Shiso Burger
Auguststraße 29 c, 10119 Berlin

This Asian burger bar was a recommendation, and for a very good reason - I’m still dreaming of my Ebi burger (a burger made from black tiger shrimp) and homemade sweet potato fries. Very busy come evening, so reserved ahead of time or risk waiting for a table. Super casual and popular amongst friends and families alike. You must try the twisted potatoes if you go, but you can forgo the beer.



If you’re looking for the best brunch in Berlin... Le Bon
Boppstraße 1, 10967 Berlin

Maybe I’m just a bit biased, swayed by their dreamy interior and delicious eggs, but Le Bon must be the best place to spot by for brunch in Berlin. Great coffee, lovely staff, and not too busy. Try their Shakshuka served with roasted chickpeas, tahini and toasted sourdough, and thank me later.

Healthy Snacks To Keep You Dancing All Night Long

Gym?

No.

I thought you said Gin.

And never was there a more accurate representation of what my weekend at Bestival is going to look like.




Now a great deal of the time I love choosing to eat whole, clean foods. I drink plenty of water, I get my 8 hours sleep a night and I exercise regularly. I do my best to be a healthy individual. But that doesn’t mean to say I don’t like to let my hair down from time to time, drown myself in glitter and indulge in a multitude of sins.

Yes, sometimes I choose to eat a bit of junk food if it’s what I’m really craving.

Party all night long instead of getting some shut eye.

And hey, if you’re passing me a glass of gin, who am I to throw it back in your face?

I’m trying to master that tricky balance in being healthy and letting myself have fun, but know that both are completely acceptable. 

So when you’re reading this, remember that these snacks are not an accurate representation of my weekend (in the slightest). These snacks represent a small proportion of what I will be eating. They are “ideal” choices to grab if I get hungry and keep me full of energy to dance all night long.  And I am the Snack Queen, so it would be an awful shame not to live up to my name. 



Hippeas Organic Chickpea Puffs are great alternatives to just picking up a bag of crisps.

These Nakd and Trek bars both contain 1-your-5-a-day and leave me feeling full and satisfied, as well as providing instant energy from the dates and protein from the nuts and soya crunchies. 

Apples and Bananas are both ideal fresh fruit choices as they don’t require refrigeration.

These Pip & Nut Sachets pair well with the Kallo Rice Cakes to make a quick snack full of healthy fats and carbohydrates. 

I ordered a massive box of these Of The Earth Superfoods Cereal Pots to take with me as you can make them with both cold and hot water for a speedy snack. Made exclusively with super foods such as spirulina, barley grass, green tea, maca and goji berries, they’re a great energy boosting way to start the day.

I’m also taking a pack of the Koko Coconut Milk Cartons to either make teas/coffees with, or to drink with a piece of fruit.

Alcohol! Because no great story ever started with a salad…

Chocolate Chai Banana Bread


If I could choose how to spend my perfect Sundays, I would be in great company, exploring picturesque neighbourhoods and sampling plenty of overindulgent foods. Of course the majority of my Sundays are spent rising at 6 to cram in a 10 mile run, catching up with work from the previous week ready for the next, and just trying to find a few spare minutes to shave my legs and collapse on a heap on the sofa. What remains in both my expectations and realities of a Sunday however, is plenty of tea and sweet treats to see me through.

This a perfect bake to use up all those sad, bruised looking bananas long forgotten in the dark corners of your kitchen. And as well as being gluten and dairy-free, this subtly sweet Chocolate Chai Banana Bread is refined sugar-free, and when kept in an airtight container will see you through the week as a delicious, healthy snack.


Ingredients


Dry
1/2 Cup Buckwheat Flour
1/2 Cup Ground Almonds
1 1/2 TSP Baking Powder
1/2 TSP Baking Soda
2 TSP Cinnamon
1 TSP Ginger
1/2 TSP Allspice
1/2 TSP Nutmeg
1 TSP Vanilla Extract
1/2 TSP Salt
Dark Chocolate Chopped

Wet
2 Large Eggs
1/4 Cup Melted Coconut Oil
1/4 Cup Milk or Milk Alternative
1 TSP Apple Cider Vinegar
3 Medium Ripe Bananas Mashed

Topping
1 Cup Pecans
1 TBSP Coconut Oil
1/4 TSP Cinnamon

Method

Preheat your oven to 180 degrees celcius or gas mark 6 and line a loaf tin.

In a large bowl, mix together all your dry ingredients and set to one side. 

On a chopping board, roughly mash your bananas with a fork leaving some larger chunks of banana. In another bowl, whisk together your eggs, coconut oil, milk and apple cider vinegar. Add in your mashed banana and mix together.

Begin to fold in the wet mixture to the dry ingredients until only just combined.

Transfer the bread mixture to your loaf tin. Sprinkle on your pecans and drizzle with the remaining coconut oil and put in the oven to bake for 45 minutes, or until a skewer comes out of the bread clean. If you find your pecans are beginning to burn on top, cover with foil and resume baking. 



So slather up a slice with jam and peanut butter and thank me later.

Food Diary Friday

7:00 AM: I start everyday with a vitamin C supplement to help me absorb iron more effectively, an Optibac Everyday Probiotics to help with digestion and gut health, and a big glass of water (not pictured).

8:00 AM: Breakfast was loaded with healthy fats and omega-3s and all round bloody delicious. I wilted spinach with thyme and black pepper in coconut oil, served with quinoa and a runny yolk fried egg fresh from the chickens in the garden. Thank you ladies.


12:30 PM: Lunch out with my Mum and Grandma was a Pepper, Tomato and Red Lentil soup, with a seeded bread roll and a sweet honey oolong tea.


4:00 PM: A snack was definitely needed to power me through my workout, so I made a creamy almond butter and soya yogurt dip to have with apple slices, and one of these Twinings Gingerbread green tea's along side it. My house officially smelt of Christmas and it was glorious.


8:00 PM: Dinner was my absolute favourite dish of aubergine slices roasted with chilli, pepper and salt, spinach wilted with garlic and black beans, and tamari infused rice. I finished the night with a pack of Strawberries & Cream Nakd Nibbles which I ate far too quickly to picture.

The Best Smoky Baked Eggs

This is my go-to recipe for refuelling after a long run, or just as a nice brunch on a slow Sunday morning. It's slightly smoky, slightly spicy, and the yolks are perfect every time. They only take a few minutes to prep and 15 minutes in the oven. Serve alongside fresh crusty bread for yolk dipping and make yourself some grown-up Dippy Eggs & Soldiers.  

Eggs are high in protein and contain all the essential amino acids that our body needs, so I always opt for them as a post-workout food. I like to pair them with a carbohydrate source like the tomatoes and wholegrain bread so we can restore our glycogen levels as well as feeding our muscles.

(I make these eggs several times a week and the yolks come out looking fantastic. Of course just not on the day I go to photograph them. Real life).

Serves 2

Ingredients
4 large free range eggs
400g tinned chopped tomatoes
100g spinach
Chilli
Paprika 
Salt and black pepper

Preheat your oven to 200 Degress Celcius/180 Degrees Fan/Gas Mark 6.

Wilt the spinach with boiling water. Squeeze to drain excess water and line it on the bottom of your oven-proof dish.

In a bowl, season your chopped tomatoes with chilli, paprika, salt and black pepper to taste. Pour it over the spinach.

Create four wells in your tomatoes, spaced evenly apart. Crack your eggs into these wells.

Bake in the oven for 12 - 15 minutes, depending on how you like your yolks. 

Serve with crusty bread and butter. 

Dip to your hearts content and enjoy.

Salt & Balsamic Vinegar Roasted Chickpeas & Other Healthy Travel Snack Ideas

The last time I got on a plane empty-handed, I went a little crazy on those tiny tubes of Pringles from the refreshment trolley. I’ll leave the rest to your imagination, but it’s safe to say I always like to keep some nutritious supplies on my persons. Here’s my picks for some sweet and savoury healthy travel snacks:


Powerful Antioxidant Blueberry & Dark Chocolate Snack Pot. 
Houmous Snack Pot & Veggie Sticks. 
The Perfect Crisp Alternatives: Kallo Sundried Tomato & Herbs Mini Corn & Rice Cakes and EatReal Chilli & Lemon Lentil Chips.
Nakd Banana Crunch Bar.
Munchy Seeds Choccy Ginger.

Salt & Balsamic Vinegar Roasted Chickpeas

If you’re a sucker for the salted peanuts with your G&T when the trolley comes round, lose the overly processed nuts (not the drink) and try this recipe for these crunchy Salt & Vinegar Roasted Chickpeas.



  • 1 can of chickpeas, drained and rinsed thoroughly
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • ground black pepper
  • 1 tbsp balsamic vinegar

Preheat the oven to Gas Mark 6/200 Degrees Celsius and line a baking tray.

Place the drained and rinsed chickpeas onto a clean tea towel (or kitchen paper) and pat dry. Transfer the chickpeas onto the baking tray and drizzle with your extra virgin olive oil and season with salt and black pepper.

Roast the chickpeas for about 15 minutes, then toss chickpeas with a wooden spoon and continue to roast for another 10 minutes until golden brown and crispy.

Drizzle the chickpeas with your balsamic vinegar and toss. Allow to cool before eating.

Store in an airtight container for 1 - 2 days. 



Remember that a balanced diet is something that needs to be sustainable for yourself. It is about creating healthy habits and not placing restrictions on ourselves - sometimes choosing to eat vegetable sticks over crisps, but still allowing ourselves treats when we really want them. So these are just some of my favourite healthy choices for snacks when travelling, but at the end of the day, I'm going on holiday so I probably still will treat myself to a few Pringles (perhaps I may just not go quite so crazy) alongside my blueberries.

Comforting Cinnamon Butter Bean Stew

Painting my nails and re-watching old episodes of 90210 are extremely tedious jobs that aren’t going to just do it themselves, you know. Some times, I just don’t have the time to slave away making a big fancy dinner when there are far more important things to do. 

This cinnamon butter bean stew is a perfect, comforting, throw-it-all-together mid-week meal that gives you more time to do all those things you keep putting off - a Jo Malone candlelit bubble bath, oh the horror, don’t make me do it.  

Make a big batch to freeze for even quicker, healthy mid-week meals! 



Serves 4

Ingredients

2 Cups Vegetable Stock
400g Courgettes (Chopped)
2 Red Onions (Chopped)
400g Broccoli & Cauliflower Florets
2 Cans Butter Beans
4 Tsp Ground Cinnamon
200g Brown Basmati Rice

Place all ingredients into a saucepan, bring to the boil and then reduce to a simmer whilst you steam the rice.

Serve and enjoy!

Weekly Dinner Plan #2

I’m a nosy person by nature, and a lover of all things food, so it’s no surprise I’m always intrigued to know what other people eat. For anyone who eagerly questions colleagues every morning “so what did you have for dinner last night?” like it’s some hot gossip, this ones for you. Here’s what this weeks Dinner plan looks like:



Monday Steamed salmon fillet with roasted asparagus spears, steamed spinach and grilled tomato.
Tuesday Tofu, pepper and cherry tomato skewers with a big side salad.
Wednesday Lentil bolognese served with brown rice penne pasta and steamed broccoli florets.
Thursday Cod fillet dressed in lemon juice served with steamed broccoli florets, butternut squash and roasted red pepper.
Friday Sweet potato fries with homemade chickpea veggie burgers and kale.
Saturday Out for dinner.
Sunday Out for dinner.

  • Since about March, I’ve slowly been adding different varieties of fish back into my diet. This week we decided to go for cod fillets dressed in lemon juice with a colourful selection of roasted vegetables. I’ll probably make a big batch of these roasted vegetables and use them in a wrap with houmous for lunch the next day.
  • Even though my Mum insists she hates lentils, her favourite dinner is a lentil bolognese sauce, which tastes oddly like beef bolognese. Unfortunately lentils don’t agree with my system too well, so we only have them once/twice a week. 
  • Friday night is usually always chip night in our house. To get an extra portion of my 5-a-day in, I like to cut sweet potatoes into fries and season with cinnamon and paprika. If we’re running short of time, we’ll probably pick some up some pre-made veggie burgers rather than make our own out of chickpeas.

Almond Butter Blueberry Cookies

Now I wanted to start this post tastefully. I'm currently "surfing the crimson wave". Some might say, "birthing a blood diamond". Or I'm attending "arts and craft week at Pantry Camp", if you get what I mean.

Yes, I totally googled: polite things to call your period. 

Too much information, I know. But the point was that this week I’ve been craving sweets, cakes and biscuits like crazy, and this is where these Almond Butter Blueberry Cookies come in.

Not only are they free-from dairy, eggs and gluten, but they are also free from refined sugars. I try and avoid processed sugars around this time of the month because my skin is usually already suffering with the unbalanced hormones and I don’t want to make it any worse. These cookies are sweetened naturally with maple syrup and vanilla extract, but still smell and taste delicious warm out of the oven to keep my cravings at bay.

 

Makes 20 Cookies

Ingredients
150g Oats
100g Buckwheat Flour
1 TSP Bicarbonate Of Soda
90ml Olive Oil
90g Tahini
250g Almond Butter
120ml Maple Syrup
75g Blueberries

Preheat the oven to 180 degrees celcius/Gas Mark 4 and line and grease a large baking tray.

In a blender or food processor, blend the oats down into a fine powder and then stir together with the buckwheat flour and bicarbonate of soda in a large bowl.

Over a low heat, melt the olive oil, tahini, almond butter and maple syrup and stir until  smooth and combined.

Pour the warm liquid mixture over the dry ingredients, along with the blueberries, and fold until all the ingredients are combined.

Roll the cookie dough into 20 golf-sized balls and flatten down with the palm of your hand on the baking tray.

Bake in the oven for 10-12 minutes (don’t overcook them or they will become dry). The cookies will still be a little soft, but they will start to firm up as they cool down. After a couple minutes transfer to a wire rack to cool completely - or just eat the whole batch before then!

Weekly Dinner Plan #1


I’m a nosy person by nature, and a lover of all things food, so it’s no surprise I’m always intrigued to know what other people eat. For anyone who eagerly questions colleagues every morning “so what did you have for dinner last night?” like it’s some hot gossip, this ones for you. Here’s what this weeks Dinner plan looks like:


Monday Steamed salmon flaked over a bed of sliced new potatoes, spinach and broccoli florets. Served with a honey and mustard dressing.
Tuesday Quick pasta arrabiata served with brown rice spaghetti (from Deliciously Ella Everyday Cookbook).
Wednesday Tortilla pizza base using the leftover arrabiata sauce, topped with roasted courgette, peppers, red onion and mushrooms. 
Thursday Steamed salmon fillet served with brown basmati rice, pak choi and fine beans, drizzled with a homemade sweet and spicy chilli tamari sauce.
Friday Out for dinner.
Saturday Quick black bean and spinach tomato pasta sauce served with brown rice spaghetti.
Sunday Either leftovers or whatever we fancy.

  • I like to make sure we’re having a portion of oily fish, like salmon, at least twice a week. The omegas found within salmon are essential fatty acids that are so important for our brain and nerve function, as well as helping to lower the risk of heart disease and supporting our skin. Our favourite dish at the moment is simple steamed salmon (we do ours in foil boats in the oven for around 10-15 minutes) drizzled with a homemade sweet chilli tamari soy sauce and served with rice and greens.
  • On Tuesday we're celebrating my Brother’s birthday and I wasn’t getting in from work until late, so we opted to make a quick arrabbiata with brown rice spaghetti. I use the leftover arrabbiata sauce to top my tortilla-base pizza the next day with roasted vegetables, or you can freeze the leftover sauce for even quicker mid-week meals.
  • Sunday mornings usually call for a run with my Dad, so we like to make another quick tomato pasta sauce we can leave in a slow-cooker for dinner Saturday night. It’s full of black beans for plant-based protein and served with brown rice spaghetti which are great carbs for energy reserves.

Willy Chase's Fit Corn


Fit Corn is like the equivalent of MTV’s “I Used To Be Fat” in the snack world, and here’s why…


The other week I received a very generous package from Willy Chase for the attention of “Popcorn Manager” (which is now a title I’m adding to my CV and LinkedIn page, fyi), filled with their healthy and delicious new Fit Corn that I couldn't wait to try out!


Now I’ve never really considered popcorn as a healthy snack and rarely consume it anywhere but in the cinema where it’s heavily laden with sugar and salt. So it came as a big surprise to me that it’s actually a wholegrain food. Not only that, it’s high in fibre and also high in polyphenol antioxidants (which helps to protect our skin and cells from environmental and free radical damage!) However, most commercial popcorn is loaded with unhealthy ingredients that cancel out all thats great for our bodies about popcorn.


But not Fit Corn. Fit Corn spent a good few months whipping itself into better shape. 


Seeing as plain popcorn isn’t too tempting, Willy Chase have gone out of their way to produce this gourmet snack collection without all the unnecessary ingredients, all the frying in oils and instead created this “cleaner, greener, fitter popcorn” air-popped by hand.
